Too Many Books!

Since beginning full-time work in January, I have felt like I don't have enough time in a day. I normally only read one book at a time, but I think that because I feel that I have too little time, I have not been able to settle on just one book. I have started and not finished the following books:
  • Anne of Green Gables
  • Atlas Shrugged
  • Green Dolphin Street
  • Les Miserables
  • Mansfield Park
The characters and plots of all of these books are swimming around in my head, and depending on my mood, I pick one of them up. Did I mention that I have also listened to eight other books in their entirety on my commute to and from work? I don't know what's gotten into me, but my goal for the week is to just focus on one book (aside from the one I listen to in the car).

Softball


So Johnny and I have been participating in a softball league the past two weeks, and tonight will be our third game. Johnny was actually part of a softball league in LA last summer, and a few times I was forced to play because there were not enough girls. During those games, I was never able to actually hit the bat to the ball even once. However, in this league I have managed a hit in every game up til now, and I have made it to first base twice!! Johnny, of course, is a natural when it comes to anything baseball related. I have been placed in the corner of the outfield where balls rarely come, which is good because catching the ball is very scary for me. I sit there and I tell myself, "This is LIFE or DEATH. You HAVE to catch it if it comes to you, or someone will die!" Unfortunately, last game one ball did come to me, and I thought of catching it, and then decided I couldn't. Johnny said it looked like I was planning on catching it and then I suddenly started backing away. So we will see how tonight goes. Happy Friday!

Sour Cream Chicken Enchiladas

Last night Johnny's sister Caitlin and her husband came to dinner. For some reason when I have guests over, I always try a new recipe... I know, not very smart. Anyway, I made sour cream chicken enchiladas, which I found here, and they were a big hit! Johnny LOVED them and the recipe was quite simple. The only change I made was to switch out one of the cans of jalapeno salsa for green salsa because I did not want it to be too spicy. If you like things more mild, you might consider switching out both cans of jalapeno salsa for green salsa. Enjoy!

Ingredients

  • 1 bunch cilantro
  • 1 cup sour cream
  • 2 (7 ounce) cans jalapeno salsa
  • 2 (7 ounce) cans prepared green chile salsa
  • 2 skinless, boneless chicken breast halves, cooked and shredded
  • 1 onion
  • 12 (6 inch) flour tortillas
  • 2 cups shredded Cheddar cheese

Directions

  1. To Make Sour Cream Mixture: In a blender or food processor, puree cilantro, sour cream, jalapeno salsa and 1/2 can of the green chile salsa. Set aside.
  2. To Make Chicken Mixture: In a large bowl, combine shredded chicken, onion and the remaining 1 1/2 cans of green chile salsa. Mix well.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Heat tortillas in conventional or microwave oven until soft. Pour enough of the sour cream mixture into a 9x13 inch baking dish to coat the bottom. Place 2 heaping tablespoonfuls of the chicken mixture in each tortilla, roll up and place seam side down in the baking dish. Pour remaining sour cream mixture over all and top with shredded cheese.
  5. Cover dish tightly with aluminum foil and bake at 350 degrees F (175 degrees C) for about 30 minutes, or until dish is heated through and bubbling

A Blissful Evening

You're either a Lost watcher or you're not. Johnny and I fall into the category of "Lost watchers," and it is our favorite Tuesday activity. This past Tuesday as we watched, I brought in two full loads of laundry ready to be folded and put away. I despise folding clothes, but without my asking, Johnny took half the pile and began to fold it. It made me so happy! Spending the night watching a good show and folding clothes with your husband--really, what more can a girl ask for?

Warmth!

I just want to shout from the rooftops how excited I am for spring and warm weather! Winter is a struggle for me. I become deathly pale and begin to feel frumpy in all the layers of clothing I wear. I hate feeling cold more than anything. Johnny and I are both warm weather people more than anyone I know. Come quickly, summer!

Update:

Hello all,

We are alive and well but with little going on right now. We work, work, work and then work some more. A few things of note:
  • Recently Johnny informed me that I needed to be more careful about leaving my iPod out in the open in the car. The iPod I have in the car is one of the old clunky photo ones from like 2005, and I assured him that no one would steal it. His response was, "When someone's looking for drug money, they don't care how old it is." I think of this every time that I hide my iPod (just to appease him), and it makes me laugh.
  • Johnny signed us up for his work's softball league and the first game is this Friday. He and I were practicing our swings in the house yesterday, and I'm sure it would have made for a very humorous video.
  • Our townhome is a major static zone. EVERY time we turn on a light switch or touch a door knob, we get horribly shocked. There must a solution to this madness.
  • We love our new computer with all its high-techness, but we spent our first night with it just typing immature things in the text to speech application. Sometimes I really can't believe we are considered adults.
